Lion’s Choice opening Liberty location in January

Lion's Choice will open its fourth location in the Kansas City metropolitan area in January. The newest location will be in the Liberty Commons Shopping Center off South Stewart Road.

LIBERTY — Lion’s Choice, a St. Louis-based sandwich shop founded by childhood friends in 1967, will open its fourth Kansas City location at 129 S. Stewart Road, Liberty, in January 2020.

According to a press release, Lion’s Choice is known for its fresh, 100% lean beef that is slow roasted on-site daily. The beef is sliced thin to order and guests can choose how they prefer their meat to be cooked. In addition to sandwiches, Lion’s Choice offers natural-cut fries, 25-cent mini frozen custard cones, soups, salads and other customizable options through its condiment bar.

The Liberty location will be Lion’s Choice fourth location in the Kansas City area. The other locations are in located in Independence, Missouri and two in Kansas – Olathe and Overland Park. The first store opened in Ballwin, Missouri and has grown to more than 28 locations in the greater St. Louis area.

All four Kansas City locations are part of the select Lion’s Choice stores that offer breakfast. Breakfast is served daily from 6 to 10 a.m. and includes Kaldi’s coffee, breakfast sandwiches, cinnamon pull-aparts, muffins, hash browns and more.

This location uses a new Lion’s Choice prototype designed with a modern guest experience in mind including a saucing station that allows customization of sandwiches with a variety of sauces and accompaniments as well as an area for online order pickups, according to the press release.

As one of the few Lion’s Choice restaurants to serve breakfast, the space also features a display for breakfast pastries and grab and go items.
